Spicy Beet & Coconut Salad

This was a quick and fresh salad that was made using grated beets and freshly grated coconut flesh.

After we extracted the cream and milk from the coconut, I was told that the meat is typically discarded. I decided to use it for this salad instead for a delicious, crunchy “no-waste” condiment. Perfect as a side dish or on top of fish.

Cassava with Spicy Kachumbari

By far, kachumbari is the dish I will make time and time again! What’s not to love? Crunchy, fresh vegetables, tangy lime juice, chilis and salt! The perfect quick pickled salad to brighten any plate! Here I paired with with boiled cassava which had a perfect creaminess to balance this salad’s bite!

    Yesterday I had the honor of meeting Mayor DeBlasi Yesterday I had the honor of meeting Mayor DeBlasio and being a guest on his media availability along with the Commissioner of Small Business Services.  I was asked to share my entrepreneurship story and how it’s important to be mentored and supported through the many challenges of building a business.  I for one know how it can be a tiresome and lonely journey when building a business and seeking real guidance.  COVID has not made it any easier but many of us had to pivot. 

 I am proud of the initiatives NYC is taking to truly support and mentor minority business.  My hope is that our success stories will be the norm and that we will build wealth-generating , legacy-building , community-changing small businesses.

    Thankful for the opportunity to share this gift. Thankful for the opportunity to share this gift.  To some it may just be cake but when given to those who are unexpecting and in need of a touch of goodwill (and a delicious thing) it can significantly touch their heart. 

Today, we were able to gift 180 of @gracescarrotcake mini carrot cakes to our local shelter so each family can have their own dessert gift.  It felt like mission impossible but every single cake had love and a prayer on it. 

May there be something sweet and special found in the memories of 2020.
