This carrot cake is not your typical cake. It's inspired by spices discovered from Chef Grace's frequent travel to Zanzibar, where she incorporates a blend of ginger, cinnamon and masala Chai spices. Carrots, a triage of nuts, coconut and fruit balance out this rich cake that will be a decadent treat for all to enjoy!
